Lhasa cuisine, top left, clockwise - 1. momos - yak stuffed & deep fried, steamed if you want; 2. tofu & green stuff; 3. sauteed yak with red peppers; 4. our verdict. Yak is a version of beef, that was tasty & tender - maybe because it really is free range.
